How to Make No Yeast Cheese, Garlic, and Herb Bread

  • Cheese and Herbs
    • 4 tbsp fresh herbs, finely chopped (such as dill, rosemary, parsley, and thyme)
    • 2 tbsp olive oil
    • 5 oz / 150g block cheese (cheddar or tasty), cut into 2mm / 0.1″ thick slices
  • Dry Ingredients
    • 2 ¼ cups plain flour
    • 2 tsp baking powder
    • ½ tsp baking soda
    • 1 tsp salt
  • Wet Ingredients
    • 1 ¼ cups buttermilk (or see Note 3 for substitute)
    • 2 eggs
    • 2 small garlic cloves, crushed

  1. Preheat the oven to 180°C / 350°F. Grease a bread tin (21 x 11 cm / 8″ x 4″) or small cake tin with butter.
  2. Mix the chopped herbs and olive oil in a small bowl.
  3. Sift the dry ingredients (flour, baking powder, baking soda, and salt) into a mixing bowl.
  4. In another bowl, combine the wet ingredients (buttermilk, eggs, and crushed garlic). Whisk until well combined.
  5. Make a well in the center of the dry ingredients. Pour the wet ingredients into the well and mix until just combined.
  6. Pour 1/3 of the batter into the prepared bread tin. Dollop half of the herb mixture across the top of the batter, then swirl it gently with a knife, incorporating it into the batter.
  7. Place half of the cheese slices into the batter, pushing some all the way in and leaving some poking out.
  8. Pour the remaining batter over the top. Dollop and swirl the remaining herbs, then place the rest of the cheese slices into the batter, pushing most of them below the surface.
  9. Bake for 30 minutes, or until the top is golden. Then, cover the bread with foil and bake for an additional 15 to 20 minutes (total baking time of 45 to 50 minutes), or until a skewer inserted into the center comes out clean.
  10. Remove from the oven and transfer the bread onto a cooling rack. Allow it to cool for at least 10 minutes before slicing.
