Homemade Cherry Pie

“Homemade Cherry Pie is a classic dessert that never goes out of style.”

INGREDIENTS:

Crust:

  • 3 cups all purpose flour
  • 1 cup unsalted butter, cold and cubed
  • 1 1/2 tsp salt
  • 6-8 Tbsp ice water
  • 1/4 tsp almond extract

Filling:

  • 5 1/2 cups fresh cherries, pitted*
  • zest of 1 lemon
  • 1 1/2 Tbsp lemon juice
  • 1 cup granulated sugar
  • 3 Tbsp cornstarch
  • 3 Tbsp all purpose flour
  • 1/2 tsp vanilla extract
  • 1/4 tsp almond extract
  • 2 Tbsp unsalted butter, cold and cubed

Topping:

  • egg wash (1 egg + 1 Tbsp water whisked together)
  • raw sugar (optional)

INSTRUCTIONS:

Crust:

  1. In a standing mixer or using a pastry cutter, combine flour and salt.
  2. Gradually incorporate the butter into the flour mixture until it resembles coarse crumbs. This can be done on low speed with a standing mixer or using a pastry cutter or fork.
  3. Add almond extract and slowly introduce ice water into the mixture, 1 tablespoon at a time, until the dough begins to come together (approximately 7 tablespoons used).
  4. Turn the dough out onto a floured surface and shape it into a ball. Divide the dough in half and reform each half into a ball or flatten it into a disc shape. Wrap each in plastic wrap and refrigerate for at least 30 minutes.

Filling:

  1. Preheat the oven to 400 degrees and have your 9″ or 10″ deep-dish pie plate ready.
  2. Combine pitted cherries, lemon zest, lemon juice, sugar, cornstarch, flour, vanilla extract, and almond extract. Allow the mixture to rest for 10-15 minutes.

Assembly:

  1. On a floured surface, roll out one of the dough balls into a large circle, approximately 1/8″ to 1/4″ thick.
  2. Transfer the rolled-out dough to your pie plate (you can gently wrap the dough around your rolling pin and unroll it over the pie plate).
  3. Gently press the dough into the pie plate, trimming any excess dough from the edges, leaving about 1/2″ of overhang if possible.
  4. Pour the cherry filling into the pie crust.
  5. Distribute 2 tablespoons of cubed butter in and around the pie filling.
  6. Roll out the second pie dough into another large circle, aiming for the same thickness (about 1/8″ to 1/4″).
  7. Using a sharp knife or a pizza cutter, slice the dough into long strips, roughly 1/2″ wide. You’ll need about 8-10 strips. To achieve this, you may have to use the dough scraps (form them into a ball and roll out again).
  8. Arrange 4-5 strips on your pie, and weave the remaining strips in and out between the ones already on the pie.
  9. Seal the edges of the pie by crimping them together.
  10. Brush the pie crust with an egg wash and, if desired, sprinkle it with raw sugar.
  11. Bake the pie for 15 minutes. Afterward, shield the pie’s edges with a pie protector (this prevents them from browning too quickly) and continue baking for an additional 30-35 minutes or until the crust is golden brown and the filling is bubbling.
  12. Allow the pie to cool before serving.
  13. Top with either ice cream or whipped cream to enjoy.
