Chicken Marsala

“Chicken Marsala is a classic Italian-American dish renowned for its rich and savory flavors.”

INGREDIENTS:

  • 1 ½ pounds boneless skinless chicken breasts
  • Salt and pepper, to taste
  • ½ cup all-purpose flour
  • 8 ounces cremini or brown button mushrooms, stemmed and sliced
  • ½ teaspoon dry thyme or 1 heaping teaspoon fresh thyme leaves
  • ¾ cup Marsala wine
  • 1 cup low-sodium chicken broth
  • 4 teaspoons all-purpose flour
  • 4 tablespoons olive oil, or as needed
  • ¼ cup diced shallots
  • 1 teaspoon minced garlic
  • 1 tablespoon butter (optional)
  • Italian flat-leaf parsley for garnish

INSTRUCTIONS:

  1. Pound or slice the chicken breasts to a thickness of ¼ to ½ inch, and cut them in half or into smaller portion-sized pieces. Season both sides with salt and pepper.
  2. Place ½ cup of flour in a shallow dish or bowl, like a pie plate, and reserve the remaining 4 teaspoons of flour for later.
  3. In a large skillet, heat 3 tablespoons of olive oil over MEDIUM-HIGH heat.
  4. Dredge each piece of seasoned chicken breast into the flour, coating both sides, and place them into the skillet. You may need to cook the chicken in batches to avoid overcrowding the skillet. Add additional olive oil between batches if needed. Cook each side for approximately 4 to 5 minutes or until the chicken is nicely browned and cooked through. Transfer the cooked chicken to a plate and set it aside.
  5. Return the skillet to MEDIUM heat and add an additional tablespoon of olive oil. Add the diced shallot, and cook and stir for a minute or two to soften. Then, add the minced garlic and cook and stir for another minute until fragrant. Afterward, add the sliced mushrooms and sauté for several minutes to soften them. Season with thyme, salt, and fresh ground pepper to taste. Add the reserved 4 teaspoons of flour to the skillet and use a whisk to combine the flour and seasonings with the mushroom mixture.
  6. Add the Marsala wine to the skillet and increase the heat slightly to bring it to a boil. Cook and whisk for a minute or two at a low boil. Then, add the chicken stock and continue to cook and whisk until the sauce becomes silky and slightly thickened. If you prefer an even silkier sauce, add optional butter and allow it to melt into the sauce.
  7. Reduce the heat to LOW and return the cooked chicken to the skillet, spooning some of the sauce over each piece.
  8. Garnish the dish with chopped parsley and serve.
