Ingredients
  

Fritter Ingredients
  • 1 cup shredded zucchini (squeezed dry) Make sure to squeeze out as much water as possible.
  • 1 cup corn kernels (fresh or frozen)
  • 2 eggs
  • 1/3 cup flour Add more if the batter is too wet.
  • 1/4 cup grated parmesan
  • 2 green onions, sliced
  • Salt & pepper, to taste
Dip Ingredients
  • 1/2 cup sour cream or Greek yogurt
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped green onion
  • Salt & a few corn kernels for garnish

Method
 

Preparation
  1. Mix all fritter ingredients in a bowl.
Cooking
  1. Heat oil in a skillet and spoon batter into rounds.
  2. Cook for 2–3 minutes per side until golden and crisp.
Serving
  1. Mix dip ingredients in a bowl. Serve with warm fritters!
