Ingredients
  

Shortbread Ingredients
  • 1 cup unsalted butter, softened Make sure the butter is at room temperature for easier mixing.
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 tbsp fresh rosemary, chopped Add more for a stronger flavor.
  • 1 lemon zested Don't skip the lemon zest for flavor.
Glaze Ingredients
  • 1/2 cup powdered sugar
  • 1-2 tbsp lemon juice Add to taste for desired glaze consistency.
  • pinch sea salt For glazing.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  3. Stir in the vanilla extract, chopped rosemary, and lemon zest.
  4. Gradually add the flour and salt, mixing until combined.
  5. Press the dough into a greased or parchment-lined baking dish.
Baking
  1. Bake for 20-25 minutes or until the edges are lightly golden.
  2. While the shortbread is baking, prepare the glaze by whisking together powdered sugar, lemon juice, and a pinch of sea salt until smooth.
  3. Once the shortbread is done, let it cool for 10 minutes, then drizzle with the glaze.
  4. Allow to cool completely before cutting into bars.
