- Line two large baking sheets with parchment paper and set aside.
- Melt the white chocolate melting wafers in the microwave for about 1 1/2 minutes on 50% power, stirring gently. Continue microwaving in 30-second increments until completely melted and smooth.
- In a large bowl, mix the crushed pretzels and crushed peppermint candy together.
- Pour the melted white chocolate over the pretzel mixture and stir until evenly coated.
- Drop large spoonfuls of the mixture onto the prepared baking sheets, shaping them into mounds with a plastic knife or spoon if needed.
- Drizzle the melted chocolate chips over each mound, then sprinkle with extra crushed peppermint.
- Allow the bites to set up completely before serving.
