Ingredients

  • 1 cup heavy cup creamy peanut butter Room temperature for easier mixing.
  • 2 cups powdered sugar
  • 3 tablespoons melted unsalted butter Room temperature for easier mixing.
  • ¾ cup graham cracker crumbs
  • 1 teaspoon vanilla extract
  • ½ teaspoon sea salt
Coating Ingredients
  • 1-½ cups white chocolate melting wafers
  • 1 tablespoon Crisco shortening
  • as needed Christmas sprinkles For garnishing.

Preparation
  1. In a large mixing bowl, combine the creamy peanut butter, powdered sugar, and melted butter using an electric mixer. Beat until smooth.
  2. Mix in graham cracker crumbs, vanilla extract, and sea salt until fully combined.
  3. Use a 1-½ inch cookie scoop to portion out the mixture, then roll each portion into a ball. Make sure the balls are smooth and compact using your palms.
Chilling
  1. Place the snowballs on a baking sheet lined with parchment paper and refrigerate for at least 1 hour.
Coating
  1. About 5-10 minutes before chilling is complete, melt the white chocolate melting wafers in a microwave-safe bowl at 50% power for 1 minute. Stir, then add Crisco shortening and continue microwaving in 30-second bursts, stirring until smooth.
  2. Dip each chilled snowball into the melted chocolate, ensuring it is fully covered, then place it back on the parchment paper. Sprinkle with Christmas sprinkles immediately.
Final Chill
  1. Return the baking sheet to the refrigerator and chill for an additional 30 minutes before serving.
