  • 1 medium Anaheim pepper, diced Mild pepper suitable for the dish.
  • 1 medium Onion, diced Base flavor for the chili.
  • 2 cloves Garlic, minced Enhances the flavor profile.
  • 4 cups Chicken broth Can be substituted with vegetable broth for vegetarian version.
  • 2 tablespoons Lime juice Freshly squeezed for best flavor.
  • 1 bunch Cilantro, optional for garnish Adds freshness to the dish.
Spices
  • 1 teaspoon Cumin Adds earthy flavor.
  • 1 teaspoon Chili powder Adjust according to heat preference.

Method
 

Preparation
  1. In a large pot, add a splash of oil and sauté the onions, poblanos, and Anaheim peppers until they are soft.
  2. Add minced garlic and cook for an additional minute.
Cooking
  1. Stir in the shredded rotisserie chicken, Great Northern beans, sweet corn, spices, and chicken broth.
  2. Bring the mixture to a gentle simmer and cook for 20-30 minutes.
Finishing Touches
  1. Just before serving, stir in fresh lime juice.
  2. Serve hot, garnished with cilantro if desired.
