  • 1 lb cooked chicken, shredded Use rotisserie chicken to save time.
  • 2 cups white beans (canned or cooked) Black beans or kidney beans can be used as substitutes.
  • 1 can diced green chiles
  • 1 onion, chopped
  • 2 cloves garlic, minced Be careful not to burn the garlic.
  • 4 cups chicken broth
Spices
  • 1 tsp cumin
  • 1 tsp chili powder
  • to taste Salt and pepper
Optional Garnishes
  • Fresh cilantro For garnish.
  • Sour cream Optional.

Method
 

Preparation
  1. Heat a large pot over medium heat and sauté the chopped onion until it becomes tender, about 3-5 minutes.
  2. Add the minced garlic, cooking until fragrant.
Cooking
  1. Stir in the shredded chicken, white beans, diced green chiles, chicken broth, cumin, and chili powder.
  2. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, stirring occasionally, until heated through.
  3. Season generously with salt and pepper to taste.
Serving
  1. Serve hot, garnished with fresh cilantro and a dollop of sour cream if desired.
