  • 2 cups Great Northern beans Use canned for convenience.
  • 1 cup shredded rotisserie chicken You can substitute cooked chicken breast or thighs.
  • 1 cup sweet corn Canned or frozen works well.
  • 1 medium poblano pepper, chopped Adjust for spice level.
  • 1 medium Anaheim pepper, chopped Adjust for spice level.
  • 1 medium onion, chopped Sauté until translucent.
  • 2 cloves garlic, minced For added flavor.
  • 1 tablespoon cumin Adjust to taste.
  • 1 tablespoon chili powder Adjust to taste.
  • 1 teaspoon paprika For extra flavor.
  • 4 cups broth Use chicken or vegetable broth.

Method
 

Cooking
  1. In a large pot, sauté onions and garlic until translucent.
  2. Add chopped poblano and Anaheim peppers and cook until soft.
  3. Stir in the Great Northern beans, shredded rotisserie chicken, and sweet corn.
  4. Season with spices to taste.
  5. Add broth and let simmer for about 30 minutes.
  6. Serve hot, garnished with your favorite toppings.
