Preparation
  1. Slice the chilled seedless watermelon into thin strips to resemble sashimi.
  2. In a blender, combine the avocado, wasabi paste, lime juice, and salt. Blend until smooth and creamy. Adjust seasoning to taste.
  3. Plate the watermelon slices elegantly, and drizzle or dollop the avocado-wasabi cream on top.
  4. Garnish with sesame seeds and microgreens or herbs if desired.
