Ingredients
  

Main Ingredients
  • 8 ounces reduced-fat feta cheese, cut into 16 one-inch cubes Regular feta can be substituted if needed.
  • 2 mini cucumbers sliced into 32 very thin rounds
  • 500 grams watermelon, cut into 32 one-inch cubes Slice off the rind before cutting.
  • 16-32 pieces mint leaves, cut in half if very large
  • to taste Tajín seasoning Add just before serving.
  • 16 pieces wooden skewers (4-7 inches long)

Method
 

Preparation
  1. Start with the watermelon and cucumbers, ensuring they are fresh.
  2. Slice off the rind of the watermelon, then cut the flesh into 32 one-inch cubes.
  3. Create 32 very thin cucumber slices.
  4. Slice the block of feta in half lengthwise to get 16 cubes, letting the cheese sit out for a few minutes to avoid crumbling.
Assembly
  1. Layer a mint leaf, followed by a watermelon cube, a cucumber slice, and skewer the feta. Top with another cucumber slice, a final cube of watermelon, and finish with another mint leaf.
  2. Place all assembled skewers on a platter.
Finishing Touch
  1. Just before serving, sprinkle with Tajín and leave some out for guests to add more if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Keep Tajín seasoning separate to maintain texture and do not freeze the skewers.
