Preparation
- Preheat your oven to 350°F (175°C) and grease an 11x7 inch cake pan.
- In a large bowl, beat together the wet ingredients: plant-based milk, sugar, oil, applesauce, vinegar, vanilla, and orange zest.
- Add the flour on top and sprinkle the baking powder, salt, and cinnamon over the flour. Mix just until smooth, avoiding overmixing.
- Pour the batter into the prepared pan and smooth the surface.
Baking
- Bake for 30-35 minutes, or until a toothpick comes out clean. Let it cool slightly before removing from the pan, then allow it to cool completely on a wire rack.
Topping
- For the strawberry topping, mix the sliced strawberries with sugar and jam in a bowl. Let it sit for 15 to 30 minutes.
Serving
- Serve the cake with a generous scoop of vegan whipped cream and the marinated strawberries. Enjoy!
