- Mix flour, sugar, and salt in a large bowl until evenly combined.
- In a different bowl, whisk eggs, then blend in milk, butter, and vanilla until the mixture is smooth.
- Gradually combine the wet and dry ingredients, stirring continuously to prevent lumps, until the batter is smooth.
- Allow the batter to rest for 10-15 minutes for the flour to hydrate.
- Warm a lightly greased non-stick skillet over medium heat. Pour a small amount of batter, swirling to cover the pan thinly.
- Cook each crepe until the edges are golden, about 1-2 minutes, then flip and cook the other side.
- Stack cooked crepes on a plate. Continue until all batter is used.
- Serve warm with your choice of fillings and toppings.
