Ingredients
  

Batter Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/4 cups milk
  • 2 tablespoons melted butter
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • pinch of salt

Instructions
 

  • Mix flour, sugar, and salt in a large bowl until evenly combined.
  • In a different bowl, whisk eggs, then blend in milk, butter, and vanilla until the mixture is smooth.
  • Gradually combine the wet and dry ingredients, stirring continuously to prevent lumps, until the batter is smooth.
  • Allow the batter to rest for 10-15 minutes for the flour to hydrate.
  • Warm a lightly greased non-stick skillet over medium heat. Pour a small amount of batter, swirling to cover the pan thinly.
  • Cook each crepe until the edges are golden, about 1-2 minutes, then flip and cook the other side.
  • Stack cooked crepes on a plate. Continue until all batter is used.
  • Serve warm with your choice of fillings and toppings.
