Ingredients
  

For the Cookie Dough
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups white sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
For the Royal Icing
  • 3 cups powdered sugar
  • 2 tablespoons meringue powder
  • 4-6 tablespoons water Adjust to achieve stiff peaks
  • Assorted colors food coloring

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, combine the flour, baking soda, and baking powder; set aside.
  3. In a large bowl, cream the softened butter and white sugar until smooth and fluffy.
  4. Beat in the egg, vanilla extract, and almond extract until well blended.
  5. Gradually mix in the dry ingredients until just incorporated.
  6. Roll rounded teaspoonfuls of dough into balls and place them on ungreased cookie sheets, spacing them appropriately.
Baking
  1. Bake in the preheated oven for about 8 to 10 minutes, or until the edges are lightly golden.
  2. Allow the cookies to cool completely on wire racks.
Royal Icing Preparation
  1. For the royal icing, mix the powdered sugar and meringue powder.
  2. Gradually add water until the icing reaches stiff peaks.
  3. Divide the icing into bowls and tint with food coloring as desired.
  4. Decorate the cooled cookies and allow them to dry completely before serving.
