  • 4 cups cooked chicken, shredded Use leftover grilled or rotisserie chicken.
  • 1/2 cup dill pickles, chopped
  • 1/2 cup mayonnaise Use low-fat mayonnaise for a lighter version.
  • 1/4 cup Greek yogurt Optional, for added creaminess.
  • 1/4 cup red onion, finely chopped
  • 1/4 cup celery, finely chopped
  • 2 tablespoons fresh dill, chopped Or 1 teaspoon dried dill.
  • Salt and pepper to taste
  • Lettuce leaves or bread for serving Use for serving.

Preparation
  1. In a large bowl, combine the shredded chicken, chopped dill pickles, red onion, and celery.
  2. In a separate small bowl, mix together the mayonnaise, Greek yogurt (if using), and fresh dill. Stir until well combined.
  3. Pour the mayonnaise mixture over the chicken mixture and toss until everything is evenly coated.
  4. Season with salt and pepper to taste.
  5. Serve on a bed of lettuce leaves or as a filling for sandwiches.
