Ingredients
  

  • 1 large cucumber, unpeeled
  • 2 cups plain full-fat Greek yogurt
  • 2 large garlic cloves, minced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh dill, minced
  • 3/4 teaspoon salt

Instructions
 

  • Using a box grater or food processor, grate the whole cucumber. Then, use cheesecloth or a tea towel to squeeze out the extra liquid from the shredded cucumber.
  • In a large bowl, combine the shredded and drained cucumber with the yogurt, minced garlic, olive oil, lemon juice, minced fresh dill, and salt.
  • Cover the bowl and refrigerate the mixture overnight, or for at least 2 hours, to allow the flavors to meld.
  • Serve the tzatziki chilled with pita bread, vegetables, or gyros.
  • Store any leftover tzatziki sauce in an airtight container in the refrigerator for up to 5 days.

Notes

This Tzatziki Sauce is best when made ahead of time to allow the flavors to develop. You can adjust the amount of garlic and dill according to your taste preferences.
