Ingredients
  

For the Candy Base
  • 2 cups toasted pecan halves
  • ½ cup toasted chopped pecans for topping
For the Caramel
  • ½ cup salted butter sliced
  • ¾ cup light brown sugar packed
  • ¼ cup granulated sugar
  • ½ cup light corn syrup
  • 7 ounces sweetened condensed milk
  • 1 teaspoon vanilla extract
For the Chocolate Topping
  • 1 ½ cups milk chocolate chips
  • 1 teaspoon vegetable shortening to help melt chocolate smoothly

Method
 

Preparation
  1. Line two sheet trays with parchment paper and divide pecan halves into 30 equal piles.
  2. Top each pile with a sprinkle of chopped pecans and set aside.
Caramel Making
  1. In a Dutch oven, add sliced butter, brown sugar, granulated sugar, and light corn syrup; heat over medium, stirring until it reaches a low boil.
  2. Stir in sweetened condensed milk and continue cooking over medium heat until the mixture reaches 240°F on a candy thermometer.
  3. Remove from heat and stir for another five minutes until thickened; add vanilla extract.
Assembly
  1. Quickly drizzle about ½ tablespoon of caramel over each pecan pile until all caramel is used.
  2. Allow the candy to sit at room temperature for about 30 minutes or refrigerate to expedite setting.
  3. In a medium bowl, melt chocolate chips with vegetable shortening in microwave, stirring until smooth.
  4. Dollop melted chocolate over each candy, smoothing it out with a teaspoon, approximately ½ - ¾ teaspoon per candy.
  5. Let the candies set at room temperature for 2-3 hours or refrigerate for 1 hour.
  6. Enjoy immediately or store carefully.
