Ingredients
  

Berry Filling
  • 3 cups blackberries
  • 3 cups blueberries
  • 2 cups raspberries
  • 3/4 cup sugar for berry mixture
  • 2 Tbsp lemon juice
  • 1 Tbsp cornstarch
Batter
  • 1 1/2 cups all-purpose flour
  • 1/3 cup sugar for topping
  • 1/3 cup brown sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 stick butter, cut into small pieces
  • 1/3 cup boiling water
  • 1 tsp sugar for topping

Method
 

Preparation
  1. Preheat your oven to 375°F and spray a 13 x 9 or a 3-quart baking dish with non-stick spray.
  2. In a large bowl, combine the blackberries, blueberries, raspberries, 3/4 cup of sugar, lemon juice, and cornstarch. Mix well and set aside.
  3. In another bowl, whisk together the flour, 1/3 cup sugar, brown sugar, baking powder, and salt.
  4. Add the cut butter pieces to the flour mixture, using a fork or pastry cutter to combine until it resembles coarse crumbs.
  5. Pour in the boiling water and mix until just combined.
Assembly and Baking
  1. Pour the berry mixture into the prepared baking dish, then spread the batter over the top.
  2. Sprinkle the final teaspoon of sugar over the batter before placing the dish in the oven.
  3. Bake for about 45-50 minutes or until the top is golden brown and the berries are bubbly.
