  • 1 piece onion chopped
  • 1 bunch fresh basil for garnish
  • 1 piece red pepper chopped
  • 1 piece yellow pepper chopped
  • 2 cloves garlic minced
  • 2 cubes Oxo beef cubes can be substituted with vegetable stock
  • 1 mug water
  • to taste Salt

Method
 

Preparation
  1. Chop the onion, garlic, and both the red and yellow peppers into small pieces.
  2. In a large pot, combine the chopped vegetables along with the 12 tomatoes, Oxo cubes, and a mug of water.
  3. Season the mixture generously with salt and pepper according to your taste preferences.
Cooking
  1. Allow the soup to simmer on low heat for several hours, letting all the flavors meld together.
  2. When you’re ready to serve, carefully blend the mixture until it reaches a smooth consistency.
