Main Ingredients
  • 4 pieces salmon fillets (skin-on or off)
  • 2 large ripe tomatoes, sliced Fresh tomatoes work best.
  • 1 cup shredded or sliced mozzarella or parmesan cheese Use your preferred cheese.
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt & cracked black pepper to taste
  • 1/4 tsp Italian seasoning
  • Fresh basil leaves, torn or sliced For garnish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Line a baking dish with foil or parchment paper.
  3. Drizzle the salmon fillets with olive oil and rub on the minced garlic.
  4. Season the fillets with salt, pepper, and Italian seasoning.
  5. Place two tomato slices on top of each fillet, then add a generous sprinkle of cheese.
Cooking
  1. Bake the salmon in the preheated oven for 15–18 minutes, or until it flakes easily and the cheese is bubbly.
  2. Garnish with fresh basil leaves before serving.

Notes

If you have leftovers, cool and store in an airtight container in the fridge for 2–3 days. Reheat in the oven or microwave. For extra flavor, marinate the salmon in olive oil, garlic, and herbs for an hour before cooking. If you like a crispy top, broil for the last couple of minutes.
