  • 1.5 cups blanched almond flour Make sure it’s finely ground; a quick blitz in a food processor can lighten the texture.
  • 1 cup finely grated Parmesan cheese Opt for Parmigiano-Reggiano for the best flavor.
  • 1 large egg It’s best to let it reach room temperature for uniform mixing.
  • a pinch sea salt Include this only if your cheese is on the mild side.
  • a pinch freshly ground black pepper Only if your cheese is mild!
  • 0.5 teaspoon garlic powder Optional, but adds a nice touch.
  • 1 teaspoon dried herbs Optional; feel free to experiment with flavors.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the almond flour and Parmesan in a mixing bowl, ensuring they are well blended.
  3. Add the egg and mix until a dough forms. If using garlic powder or herbs, fold those into the mixture as well.
  4. Scoop small portions of the dough and shape them into round discs (about 1-2 inches in diameter) on the prepared baking sheet. Leave a little space in between each one.
  5. Bake in the preheated oven for about 10-12 minutes, or until golden and crispy. Keep an eye on them to prevent burning.
  6. Cool down on a wire rack before enjoying. They will continue to crisp as they cool.
