  • 2 tablespoons chili powder Adjust according to your spice preference.
  • 1 tablespoon cumin Provides a warm, earthy flavor.
  • 1 teaspoon paprika Smoked paprika adds a nice depth.

  • In a large pot, cook the ground beef over medium heat until browned.
  • Add the chopped onion and minced garlic, and sauté until softened.
  • Stir in the chili powder, cumin, paprika, salt, and pepper.
  • Add the kidney beans, black beans, and diced tomatoes.
  • Bring to a boil, then reduce heat and simmer for at least 30 minutes.
  • Serve hot with optional toppings such as cheese, sour cream, or green onions.

Notes

Store leftovers in an airtight container for up to 4 days or freeze for up to 3 months. For a spicier monkey, add more chili powder or jalapeños. Pair with cornbread or tortilla chips for a complete meal.
