  • 1 pound ground beef (80/20 is fine for flavor; leaner works too)
  • 1 can cream of mushroom soup (10.5–11 oz) can substitute cream of chicken or celery for a different flavor
  • 1 cup shredded cheddar cheese sharp or mild; freshly shredded melts best
  • 1 bag frozen tater tots (20–32 oz bag) use amount to fit a 9x13
  • 1 small onion, chopped yellow or sweet
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. In a skillet over medium heat, add the ground beef and chopped onion. Cook, breaking up the beef, until browned and the onion is translucent, about 6–8 minutes. Drain excess fat.
  3. Return the skillet to low heat. Stir in the cream of mushroom soup and season with salt and pepper. Mix until combined and warm. Taste and adjust seasoning.
  4. Spread the beef mixture evenly in the prepared baking dish.
  5. Sprinkle the shredded cheddar evenly over the beef layer.
  6. Arrange the frozen tater tots in a single even layer on top of the cheese.
  7. Bake for 30–35 minutes, until the tots are golden and crispy and the casserole is bubbling around the edges. If you want extra browning, broil for 1–2 minutes at the end — watch closely.
  8. Let the casserole rest for 5 minutes before serving so it sets up a bit.

Notes

For a lighter version, swap half the beef for cooked diced mushrooms or use ground turkey. For extra cheesiness, add more cheddar before baking. Best served with sides like green salad or steamed vegetables.
