  • - 1 package 15.25 oz yellow cake mix
  • - 1 package 3.4 oz instant lemon pudding mix
  • - 3/4 cup water
  • - 1/2 cup vegetable oil
  • - 4 large eggs
  • - 1/3 cup lemon juice
  • - 2 cups confectioners' sugar

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x13-inch pan.
  2. In a large bowl, combine cake mix and instant pudding mix. Add water, oil, and eggs; mix until smooth. Spread batter evenly in prepared pan.
  3. Bake for 40-45 minutes until a toothpick inserted comes out clean. While hot, poke holes in the cake with a fork.
  4. For the glaze, mix lemon juice and confectioners' sugar until smooth. Pour over hot cake, allowing it to seep into the holes. Let cake cool completely before serving.
