  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 can diced tomatoes with green chilies
  • 1 cup shredded cheese
  • 1 cup corn (optional) Add for sweetness and texture
  • 1 cup black beans (optional) Add for extra protein
  • to taste chopped green onions (for garnish)

Method
 

Preparation
  1. Cook the tortellini according to package instructions; drain and set aside.
  2. In a large skillet, cook the ground beef or turkey over medium heat until browned.
  3. Stir in the taco seasoning, diced tomatoes, corn, and black beans. Cook for 5 minutes, allowing the flavors to meld.
  4. Add the cooked tortellini to the skillet and mix well to combine.
  5. Sprinkle shredded cheese on top, cover, and let it melt.
  6. Garnish with chopped green onions and serve warm.
