Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
Mix
- Add the taco seasoning to the beef along with the black beans, corn, tomatoes, and cooked rice. Stir until everything is well combined and heated through.
Layer
- In a greased 9×13 inch casserole dish, spoon half of the mixture at the bottom. Sprinkle 1 cup of shredded cheddar cheese over this layer.
- Add the remaining beef and rice mixture on top and finish with the rest of the cheese.
Bake
- Cover with aluminum foil and bake for about 20 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is golden and bubbly.
Serve
- Once baked, let it cool for a few minutes. Garnish with green onions and fresh cilantro before serving.
