Ingredients
  

Main ingredients
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 3 cups cooked rice Use seasoned rice for extra flavor.
  • 1 can (15 oz) black beans Drained.
  • 1 cup corn kernels Can be canned or frozen.
  • 1 cup diced tomatoes
  • 1.5 cups shredded cheddar cheese Can substitute for vegan cheese if desired.
  • 2 pieces green onions Sliced, for garnish.
  • to taste fresh cilantro Chopped, for garnish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
Mix
  1. Add the taco seasoning to the beef along with the black beans, corn, tomatoes, and cooked rice. Stir until everything is well combined and heated through.
Layer
  1. In a greased 9×13 inch casserole dish, spoon half of the mixture at the bottom. Sprinkle 1 cup of shredded cheddar cheese over this layer.
  2. Add the remaining beef and rice mixture on top and finish with the rest of the cheese.
Bake
  1. Cover with aluminum foil and bake for about 20 minutes.
  2. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is golden and bubbly.
Serve
  1. Once baked, let it cool for a few minutes. Garnish with green onions and fresh cilantro before serving.

Notes
