Ingredients
  

Pasta and Protein
  • 8 oz penne pasta Can substitute with rotini or shells.
  • 1 lb ground beef or turkey Choose lean meat for a healthier dish.
Seasoning and Base
  • 1 packet taco seasoning Use your favorite brand or homemade.
  • 1 cup diced tomatoes Canned works well.
  • 1 cup corn Canned or frozen is acceptable.
  • 1 cup black beans Drained and rinsed for a good source of protein.
Creamy Finish
  • 1 cup shredded cheese Cheddar or Mexican blend; feel free to mix cheeses.
  • 1/2 cup sour cream For a creamier texture, consider using cream cheese.
Garnish
  • to taste Salt and pepper Adjust seasoning to preference.
  • to taste Chopped cilantro Optional for serving.

Method
 

Preparation
  1. Bring a large pot of salted water to a boil and cook penne according to package directions until al dente. Drain and set aside.
  2. While the pasta cooks, heat a large skillet over medium-high heat. Add ground beef or turkey and cook until browned, about 6–8 minutes. Drain excess fat if needed.
Cooking
  1. Stir in taco seasoning and 1/4 cup water. Simmer for 1–2 minutes to allow the spices to bloom.
  2. Add diced tomatoes, corn, and black beans to the skillet, stirring to combine and heating through for 2–3 minutes. Season with salt and pepper.
  3. Reduce heat to low and add drained penne, stirring until combined. Sprinkle shredded cheese over pasta and fold in until melted.
  4. Remove from heat and stir in sour cream until incorporated and creamy.
  5. Serve immediately, garnished with chopped cilantro if desired.
