Preparation
- Bring a large pot of salted water to a boil and cook penne according to package directions until al dente. Drain and set aside.
- While the pasta cooks, heat a large skillet over medium-high heat. Add ground beef or turkey and cook until browned, about 6–8 minutes. Drain excess fat if needed.
Cooking
- Stir in taco seasoning and 1/4 cup water. Simmer for 1–2 minutes to allow the spices to bloom.
- Add diced tomatoes, corn, and black beans to the skillet, stirring to combine and heating through for 2–3 minutes. Season with salt and pepper.
- Reduce heat to low and add drained penne, stirring until combined. Sprinkle shredded cheese over pasta and fold in until melted.
- Remove from heat and stir in sour cream until incorporated and creamy.
- Serve immediately, garnished with chopped cilantro if desired.
