Ingredients
  

For the potatoes
  • 4 large large russet potatoes Choose large russet potatoes for more filling options.
For the taco filling
  • 1 lb ground beef Can substitute with turkey or chicken for a lighter version.
  • 1 packet taco seasoning Substitute with a different spice blend for new flavors.
  • 1 cup water
Toppings
  • 1 cup sharp cheddar cheese Experiment with different types of cheese for added flavor.
  • 1 cup sour cream
  • 1 bunch fresh green onions Chopped for topping.
  • 2 medium ripe tomatoes Diced for topping.
  • 2 tbsp olive oil
  • to taste salt For seasoning potatoes.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and bake the potatoes for about 45-60 minutes or until they are tender.
  2. In a skillet, brown the ground beef over medium heat.
  3. Add the taco seasoning and water to the beef. Cook until the beef is well mixed with the seasoning and fully cooked.
  4. Once the potatoes are cooked, carefully slice them open.
Assembly
  1. Top the baked potatoes with the cooked ground beef, shredded cheddar cheese, sour cream, chopped green onions, and diced tomatoes.
  2. Serve immediately and enjoy!

Notes
