  • 4 large Large russet potatoes Choose large potatoes for more filling.
  • 1 lb Ground beef Can substitute with turkey or chicken for a lighter version.
  • 1 packet Taco seasoning Can swap for a different spice blend.
  • 1/2 cup Water Used for mixing with the taco seasoning.
  • 1 cup Sharp cheddar cheese, shredded Experiment with different types of cheese for added flavor.
  • 1/2 cup Sour cream For serving.
  • 3 each Fresh green onions, chopped For topping.
  • 2 each Ripe tomatoes, diced For topping.
  • 1 tbsp Olive oil Optional for browning beef.
  • to taste Salt For seasoning.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and bake the potatoes until tender, about 45-60 minutes.
  2. In a skillet, brown the ground beef over medium heat. Add the taco seasoning and water, cooking until the beef is well mixed with the seasoning.
Assembly
  1. Once the potatoes are baked, carefully slice them open.
  2. Top the potatoes with the cooked ground beef, shredded cheddar cheese, sour cream, chopped green onions, and diced tomatoes.
