  • 1 pound ground turkey
  • 2 medium sweet potatoes, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) corn, drained
  • 1 one onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Method
 

Cooking
  1. In a large pot, brown the ground turkey over medium heat.
  2. Add chopped onion and garlic, cooking until softened.
  3. Stir in diced sweet potatoes, diced tomatoes, corn, chicken broth, chili powder, and cumin.
  4. Bring to a boil, then reduce heat and let simmer for about 25-30 minutes or until sweet potatoes are tender.
  5. Season with salt and pepper to taste.
  6. Serve hot and enjoy as a comforting meal.

Notes
