  • 2 lbs beef tenderloin
  • 1/4 cup butter, softened Make sure it is at room temperature for easy mixing.
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • Salt and pepper to taste

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, mix the softened butter with chopped rosemary, thyme, salt, and pepper.
  • Rub the herb butter mixture all over the beef tenderloin.
  • Place the beef on a roasting rack in a baking dish.

Cooking

  • Roast in the preheated oven for about 25-30 minutes, or until the internal temperature reaches your desired doneness.
  • Remove from the oven and let it rest for 10 minutes before slicing.

Notes

Serve with sides like roasted vegetables, mashed potatoes, or a fresh salad. A nice red wine enhances the dining experience. Leftover beef can be stored in an airtight container in the fridge for up to three days or frozen for longer storage.
