  • 1.5 cups Monterey Jack cheese Feel free to substitute with other cheeses.
  • 1.5 cups Cheddar cheese You can mix different cheeses.
  • 6 large Eggs Whisked until well beaten.
  • 1 cup Sour cream For serving, optional.
  • 0.5 bunch Fresh cilantro Chopped, for garnish.
  • 1 medium Avocado Slices, for garnish.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a baking dish, layer the green chile peppers evenly.
  3. In a medium bowl, whisk the eggs until well beaten, then pour them over the layered chiles.
  4. Generously sprinkle Monterey Jack and cheddar cheese on top.
  5. Bake for 30-35 minutes, or until the eggs are fully set and cheese is bubbly and golden.
  6. Serve hot, garnished with a dollop of sour cream, chopped cilantro, or slices of fresh avocado.
