  • 3 cups cooked, shredded chicken Use rotisserie chicken for added flavor.
  • 2 cups corn (fresh, frozen, or canned)
  • 1 cup sour cream
  • 1 cup cheese (cheddar or Mexican blend)
  • 1 package taco seasoning
  • 1 cup crushed tortilla chips For topping.
  • Chopped green onions For garnish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, corn, sour cream, taco seasoning, and half of the cheese. Mix until well blended.
  3. Pour the mixture into a greased casserole dish.
  4. Top the casserole with the remaining cheese and sprinkle the crushed tortilla chips on top.
Baking
  1. Bake for 25-30 minutes, or until heated through and the cheese is bubbly.
  2. Garnish with chopped green onions before serving.
