  • 3 cups cooked chicken (shredded)
  • 3 cups corn kernels
  • 2 cups cream cheese Soften for easy mixing
  • 1 cup shredded cheddar cheese Feel free to switch up the cheese
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • 2 cups crushed tortilla chips For that satisfying crunch
  • for garnish Fresh cilantro

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, corn kernels, cream cheese, cheddar cheese, milk, garlic powder, onion powder, cumin, salt, and pepper. Stir until well mixed.
  3. Pour the mixture into a greased casserole dish, spreading it evenly.
  4. Generously top the mixture with crushed tortilla chips.
  5. Place it in the oven and bake for 25-30 minutes or until the casserole is bubbly and golden on top.
  6. Once out of the oven, garnish with fresh cilantro before serving.
