- In a medium bowl, stir together the flour, brown sugar, baking powder, and salt.
- Pour in the milk, add the egg, vegetable oil, and vanilla extract. Mix until well blended.
- Gently fold in the chopped strawberries into the batter.
- Grease and heat a large skillet or griddle over medium heat.
- Pour the batter onto the griddle using a large spoonful for each pancake.
- Cook until bubbles form on the surface of the pancakes and the edges are dry, about 2 to 3 minutes.
- Flip the pancakes and cook until browned on the other side, about 2 minutes more.
- Repeat with the remaining batter.
- Serve the pancakes warm, topped with additional strawberries and your favorite syrup if desired.
Notes
For extra freshness and sweetness, use ripe and juicy strawberries. Adjust the amount of salt to your taste preference.
