Ingredients
  

Fresh Strawberry Mixture
  • 3 cups fresh strawberries, roughly chopped Use ripe strawberries for the best flavor.
  • cup granulated sugar
Mascarpone Layer
  • 16 ounces mascarpone cheese Can be substituted with cream cheese for a tangy flavor.
  • 2 cups heavy whipping cream
  • 2 teaspoons vanilla extract
  • ¾ cup powdered sugar, sifted
  • 6 tablespoons vanilla instant pudding Helps stabilize the mascarpone mixture.
Assembly Ingredients
  • 12 ounces ladyfingers
  • 21 ounces strawberry pie filling

Method
 

Preparation
  1. In a bowl, combine the roughly chopped strawberries and granulated sugar. Allow them to sit for about 15 minutes to release their juices.
Make the Mascarpone Layer
  1. In another large bowl, whisk the mascarpone cheese and heavy whipping cream together until smooth. Then add the vanilla extract and sifted powdered sugar, mixing until fluffy.
  2. Gently fold in the vanilla instant pudding into the mascarpone mixture.
Assemble the Dessert
  1. In a baking dish, lay half of the ladyfingers. Soak them gently in the strawberry juice before spreading half of the mascarpone mixture over them.
  2. Layer half of the strawberry pie filling. Repeat the layers, finishing with the remaining mascarpone mixture on top.
Chill
  1. Cover the dish and refrigerate for at least 4 hours.
