Preparation
- In a bowl, combine the chopped strawberries and granulated sugar. Let them sit for about 15 minutes until they release their juices.
- In another bowl, whisk together the mascarpone cheese and heavy whipping cream until smooth. Add in the vanilla extract and sifted powdered sugar and mix until fluffy.
- Stir in the vanilla instant pudding to help the mascarpone mixture firm up slightly.
Assembly
- Lay half of the ladyfingers in a baking dish. Soak them gently in the strawberry juice.
- Spread half of the mascarpone mixture over them, then layer half of the strawberry pie filling. Repeat these layers, finishing with the remaining mascarpone mixture.
Chilling
- Cover and refrigerate the dessert for at least 4 hours, allowing the flavors to meld beautifully.
