Ingredients
  

For the strawberry mixture
  • 3 cups fresh strawberries, roughly chopped Can be substituted with other berries.
  • cup granulated sugar Adjust sweetness based on the strawberries' ripeness.
For the mascarpone layer
  • 16 ounces mascarpone cheese For best flavor use high-quality mascarpone.
  • 2 cups heavy whipping cream
  • 2 teaspoons vanilla extract
  • ¾ cup powdered sugar (sifted)
  • 6 tablespoons vanilla instant pudding Just under one 3.4 ounce box.
For assembly
  • 12 ounces ladyfingers Gluten-free ladyfingers can be used for dietary restrictions.
  • 21 ounces strawberry pie filling

Method
 

Preparation
  1. In a bowl, combine the chopped strawberries and granulated sugar. Let them sit for about 15 minutes until they release their juices.
  2. In another bowl, whisk together the mascarpone cheese and heavy whipping cream until smooth. Add in the vanilla extract and sifted powdered sugar and mix until fluffy.
  3. Stir in the vanilla instant pudding to help the mascarpone mixture firm up slightly.
Assembly
  1. Lay half of the ladyfingers in a baking dish. Soak them gently in the strawberry juice.
  2. Spread half of the mascarpone mixture over them, then layer half of the strawberry pie filling. Repeat these layers, finishing with the remaining mascarpone mixture.
Chilling
  1. Cover and refrigerate the dessert for at least 4 hours, allowing the flavors to meld beautifully.

Notes
