  • 8 oz cream cheese, softened Make sure it's at room temperature for easier mixing.
  • 2 cups sugar Granulated sugar works best for sweetness.
  • 4 large eggs Best if they are at room temperature.
  • 1 tsp vanilla extract Pure vanilla extract is recommended.
  • 2.5 cups all-purpose flour Sifted for best results.
  • 0.5 tsp salt Adjust according to taste.
  • 1 cup fresh strawberries, pureed Use ripe, sweet strawberries.

Method
 

Preparation
  1. Preheat your oven to 325°F (165°C) and grease and flour a loaf pan.
  2. In a large bowl, cream the softened butter and cream cheese until smooth.
  3. Gradually add the sugar, beating the mixture until fluffy.
  4. Incorporate the eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla extract for added flavor.
  6. In another bowl, mix the flour and salt together.
  7. Alternately add the dry mixture and strawberry puree to the creamed mixture.
  8. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
