Ingredients
  

Main Ingredients
  • 1 box strawberry cake mix I used Betty Crocker, but feel free to use different brands.
  • 2 large eggs Standard size eggs.
  • 1/4 cup canola oil or vegetable oil Oil can be substituted with other oils if desired.
  • 1 teaspoon pure vanilla extract
For the Glaze
  • 2 cups powdered/confectioners sugar
  • 1/3 cup strawberries (chopped) Fresh strawberries work best.
  • 1 tablespoon lemon juice or water Adjust for desired consistency.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the strawberry cake mix, eggs, oil, and vanilla extract. Mix thoroughly using a fork or hand mixer.
  3. Line a baking sheet with parchment paper. Using a cookie scoop, create tablespoon-sized balls of dough and place them about 2 inches apart on the baking sheet.
Baking
  1. Bake the cookies for about 10 minutes, or until the edges start to brown. Be cautious not to over-bake them.
  2. Once done, remove the cookies from the oven and let them cool on the baking sheet.
Making the Glaze
  1. In a food processor or blender, blend the chopped strawberries and lemon juice until smooth.
  2. Add the strawberry mixture to the powdered sugar and mix until smooth. Adjust the thickness with lemon juice or powdered sugar as needed.
  3. Transfer the cookies to a cooling rack and spoon the glaze on top.
  4. Sprinkle with powdered sugar if desired before serving.

Notes
