Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the strawberry cake mix, eggs, oil, and vanilla extract. Mix thoroughly using a fork or hand mixer.
- Line a baking sheet with parchment paper. Using a cookie scoop, create tablespoon-sized balls of dough and place them about 2 inches apart on the baking sheet.
Baking
- Bake the cookies for about 10 minutes, or until the edges start to brown. Be cautious not to over-bake them.
- Once done, remove the cookies from the oven and let them cool on the baking sheet.
Making the Glaze
- In a food processor or blender, blend the chopped strawberries and lemon juice until smooth.
- Add the strawberry mixture to the powdered sugar and mix until smooth. Adjust the thickness with lemon juice or powdered sugar as needed.
- Transfer the cookies to a cooling rack and spoon the glaze on top.
- Sprinkle with powdered sugar if desired before serving.
