  • 450 grams shrimp, peeled and deveined
  • 450 grams asparagus, trimmed
  • 225 grams cremini mushrooms, sliced
  • 4-6 cloves garlic, minced
  • 30 milliliters olive oil
  • 15 milliliters soy sauce or tamari Use tamari for a gluten-free option.
  • 1 teaspoon ground black pepper
  • Salt, to taste
  • 15 grams unsalted butter (optional) Add in the last minute of cooking for richness.

Method
 

Preparation
  1. Wash and trim the asparagus.
  2. Slice the cremini mushrooms.
  3. Peel and devein the shrimp.
  4. Mince the garlic cloves.
  5. Heat olive oil in a large nonstick skillet or wok over medium-high heat.
Cooking
  1. Add the minced garlic and stir-fry for about 30 seconds until fragrant.
  2. Toss the sliced mushrooms and trimmed asparagus into the pan. Stir-fry for 3-5 minutes until the vegetables are bright green and slightly tender-crisp.
  3. Introduce the shrimp and continue stir-frying for an additional 2-3 minutes until they turn pink and are cooked through.
  4. Pour in the soy sauce or tamari, add black pepper and salt to taste. Stir in butter if using, in the last minute of cooking.
  5. Serve immediately on steamed rice or quinoa.

Notes
