Ingredients

For the Marinade
  • 1/4 cup gochujang (Korean chili paste) Provides heat and flavor.
  • 1/4 cup honey Adds sweetness and stickiness.
  • 2 tablespoons soy sauce Use low-sodium for a healthier option.
  • 2 tablespoons rice vinegar For acidity.
  • 1 tablespoon sesame oil Adds nuttiness.
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
For the Chicken
  • 1.5 pounds boneless, skinless chicken thighs You can substitute with chicken breasts if preferred.
  • 1 tablespoon vegetable oil For sautéing.
  • 1 teaspoon sesame seeds For garnish.
  • Sliced green onions For garnish.
  • Salt and pepper, to taste
For Serving
  • Cooked rice or noodles To serve with the chicken.

Method

Preparation
  1. Cut the chicken thighs into bite-sized pieces and season them with salt and pepper.
  2. In a large mixing bowl, combine gochujang, honey, soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger. Stir until well mixed to create the marinade.
  3. Add the chicken to the marinade and ensure they are thoroughly coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for better flavor.
Cooking
  1. Heat the vegetable oil in a large skillet over medium-high heat. Add the marinated chicken pieces, discarding excess marinade.
  2. Cook the chicken for about 6-8 minutes until browned and cooked through, stirring occasionally for even cooking.
  3. Remove the skillet from the heat and transfer the chicken to a serving dish.
  4. Garnish with sesame seeds and sliced green onions.
  5. Serve the sticky honey gochujang chicken over cooked rice or noodles.
