Preparation
- Season the steaks with salt and pepper on both sides.
Cooking
- In a large skillet, heat olive oil over medium-high heat. Add the steaks and cook to your desired doneness, about 4-5 minutes per side for medium-rare. Remove from skillet and let rest.
- In the same skillet, lower the heat and add butter. Once melted, add minced garlic and sauté until fragrant.
- Stir in the heavy cream, beef broth, and Dijon mustard. Bring to a simmer and let it thicken slightly.
- Reduce heat and stir in Parmesan cheese until melted and smooth. Adjust seasoning with salt and pepper.
- Serve the steaks with the garlic cream sauce drizzled on top and garnish with fresh parsley.
Notes
Let the steak come to room temperature before cooking for more even cooking. Use a meat thermometer to check the doneness of the steak. Aim for 130°F (54°C) for medium-rare. To enhance the flavor, you can marinate the steak for a few hours before cooking. For a thicker sauce, let it simmer longer until it reaches your desired consistency.
