  • 1 pound sirloin steak or your favorite cut
  • 8 cups mixed greens or your preferred lettuce
  • 1 cup grape tomatoes (halved)
  • 1 cup roasted corn kernels
  • ½ cup red onion (thinly sliced)
  • 1 each avocado (sliced)
  • 4 oz blue cheese (crumbled)
For the Dressing
  • 1/3 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 1 clove garlic (minced)
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

Cooking the Steak
  1. Season your steak with olive oil, salt, and pepper. Grill or pan-sear for about 4-5 minutes on each side or until your preferred doneness is reached. Let it rest for a few minutes before slicing.
Making the Dressing
  1. Whisk together olive oil, balsamic vinegar, garlic, Dijon mustard, salt, and pepper in a bowl until well combined.
Assembling the Salad
  1. In a large bowl, combine mixed greens, grape tomatoes, roasted corn, red onion, and avocado. Toss gently.
  2. Place your sliced steak on top and drizzle with the dressing. Add crumbled blue cheese just before serving.
