Ingredients
  

Main Ingredients
  • 300 g fresh spinach (or 200 g frozen, thawed and drained) Be sure to squeeze out excess moisture from thawed spinach.
  • 200 g feta cheese, crumbled You can replace with other types of cheese.
  • 1 piece egg For an egg wash, use a little on the pastry before baking.
  • 4 sheets puff pastry sheets Follow the package instructions for thawing.

Method
 

Preparation
  1. Preheat the oven according to the puff pastry package instructions.
  2. If using fresh spinach, wash and chop it. If using frozen, ensure it's thoroughly thawed and drained.
  3. In a bowl, mix the spinach, crumbled feta cheese, and egg until well combined.
  4. Roll out the puff pastry sheets on a floured surface. Cut them into squares or rectangles.
Assembly
  1. Place a spoonful of the spinach and feta mixture in the center of each pastry piece.
  2. Fold the pastry over to enclose the filling, pressing the edges to seal.
  3. Place the pastry rolls on a baking sheet lined with parchment paper.
Baking
  1. Bake for 20-25 minutes or until golden brown.
Serving
  1. Serve warm, straight from the oven, with sauces like tzatziki or a spicy tomato dip.

Notes
