  • 1 cup feta cheese, crumbled
  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/4 cup olive oil
  • 3 large eggs
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup milk
  • Optional: herbs like dill or oregano for added flavor

Preparation

  • Preheat your oven to 375°F (190°C) and grease a loaf pan.
  • In a large bowl, mix the chopped spinach and crumbled feta cheese.
  • In another bowl, whisk together the eggs, olive oil, and milk.
  • In a separate bowl, combine the all-purpose flour, whole wheat flour, baking powder, salt, and black pepper.
  • Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Fold in the spinach and feta mixture until evenly distributed.
  • Pour the batter into the prepared loaf pan and smooth the top.

Baking

  • Bake in the oven for 40-50 minutes or until a toothpick inserted in the center comes out clean.
  • Let cool for a few minutes before slicing and serving.

Notes

You can serve this loaf warm or at room temperature. It pairs well with salad or soup. Store in an airtight container in the fridge for 3-4 days or freeze slices for longer storage.
