Preparation
- Heat olive oil in a skillet over medium heat. Add garlic and cook for about 30 seconds.
- Add the chopped spinach and cook until wilted, which usually takes 2–3 minutes. Season with salt and pepper. Let it cool slightly.
Assembly
- Butter one side of each slice of bread. On the unbuttered side, layer mozzarella cheese, the sautéed spinach mixture, crumbled feta, and more mozzarella.
- Top it with another slice of bread, making sure the buttered side is facing out.
Grilling
- Heat a nonstick pan over medium heat. Grill each sandwich for about 3–4 minutes on each side until golden brown and the cheese is melted and gooey.
Serving
- Slice the sandwich in half and serve warm. It goes great with tomato soup or a side salad.

Notes
You can add other ingredients like sliced tomatoes or olives for different flavors. This sandwich can also be made with goat cheese or a mixture of different shredded cheeses for a unique taste. Alternatively, you can switch out spinach for kale or other leafy greens.
