Main Ingredients

  • 4 slices sourdough or artisan sandwich bread Any bread can be used, but sourdough or artisan bread gives the best flavor.
  • 1 tablespoon olive oil
  • 2 cups fresh spinach, chopped Make sure to squeeze out excess water from the cooked spinach to avoid a soggy sandwich.
  • 1 clove garlic, minced
  • 1/2 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons unsalted butter, softened
  • 1 pinch salt
  • 1 pinch black pepper

Instructions
 

Preparation

  • Heat olive oil in a skillet over medium heat. Add garlic and cook for about 30 seconds.
  • Add the chopped spinach and cook until wilted, which usually takes 2–3 minutes. Season with salt and pepper. Let it cool slightly.

Assembly

  • Butter one side of each slice of bread. On the unbuttered side, layer mozzarella cheese, the sautéed spinach mixture, crumbled feta, and more mozzarella.
  • Top it with another slice of bread, making sure the buttered side is facing out.

Grilling

  • Heat a nonstick pan over medium heat. Grill each sandwich for about 3–4 minutes on each side until golden brown and the cheese is melted and gooey.

Serving

  • Slice the sandwich in half and serve warm. It goes great with tomato soup or a side salad.

Notes

You can add other ingredients like sliced tomatoes or olives for different flavors. This sandwich can also be made with goat cheese or a mixture of different shredded cheeses for a unique taste. Alternatively, you can switch out spinach for kale or other leafy greens.
