Ingredients
  

Main Ingredients
  • 4 slices sourdough or artisan sandwich bread Any bread can be used, but sourdough or artisan bread gives the best flavor.
  • 1 tablespoon olive oil
  • 2 cups fresh spinach, chopped Make sure to squeeze out excess water from the cooked spinach to avoid a soggy sandwich.
  • 1 clove garlic, minced
  • 1/2 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons unsalted butter, softened
  • 1 pinch salt
  • 1 pinch black pepper

Method
 

Preparation
  1. Heat olive oil in a skillet over medium heat. Add garlic and cook for about 30 seconds.
  2. Add the chopped spinach and cook until wilted, which usually takes 2–3 minutes. Season with salt and pepper. Let it cool slightly.
Assembly
  1. Butter one side of each slice of bread. On the unbuttered side, layer mozzarella cheese, the sautéed spinach mixture, crumbled feta, and more mozzarella.
  2. Top it with another slice of bread, making sure the buttered side is facing out.
Grilling
  1. Heat a nonstick pan over medium heat. Grill each sandwich for about 3–4 minutes on each side until golden brown and the cheese is melted and gooey.
Serving
  1. Slice the sandwich in half and serve warm. It goes great with tomato soup or a side salad.

Notes

You can add other ingredients like sliced tomatoes or olives for different flavors. This sandwich can also be made with goat cheese or a mixture of different shredded cheeses for a unique taste. Alternatively, you can switch out spinach for kale or other leafy greens.
