Ingredients
  

For the Rice and Salmon
  • 1 cup white rice or brown rice for a healthier option
  • 2 fillets salmon fresh
  • 1 tbsp olive oil for searing
  • 1 tsp chili powder for seasoning
For Toppings
  • 1/4 cup spicy mayo store-bought or homemade
  • 1 piece cucumber sliced
  • 2 pieces green onions chopped

Method
 

Preparation
  1. Cook the rice according to the package instructions, which usually takes about 15-20 minutes.
  2. In a pan over medium-high heat, add the olive oil and let it get hot.
Cooking
  1. Sprinkle the chili powder over the salmon fillets and place them in the hot pan.
  2. Cook for about 4-5 minutes on each side, or until they reach your desired level of doneness.
Assembly
  1. In a bowl, serve a generous portion of rice.
  2. Top it with the seared salmon, followed by sliced cucumbers and chopped green onions.
  3. Drizzle with spicy mayo before serving.
