  • 1 piece grilled chicken breast, sliced
  • 4 oz rice noodles, cooked & cooled
  • 1 cup shredded carrots
  • 1/2 cup chopped cucumber
  • 1/4 cup chopped peanuts Toast lightly for extra crunch if desired.
  • 1–2 pieces red chilies, thinly sliced Adjust according to spice preference.
  • to taste fresh cilantro

Dressing Ingredients

  • 2 tbsp lime juice
  • 1 tbsp fish sauce or soy sauce Substitute soy sauce for a vegan option.
  • 1 tsp chili oil or sriracha
  • 1 tsp honey Omit for vegan version.
  • 1 clove garlic, minced

Instructions
 

Preparation

  • Whisk all vinaigrette ingredients together in a small bowl.
  • In a larger bowl, toss the noodles, shredded carrots, chopped cucumber, and fresh cilantro.

Assembly

  • Add the sliced grilled chicken on top and drizzle with the dressing.
  • Finally, sprinkle the chopped peanuts and sliced chilies over the top. Serve it chilled or at room temperature.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. For best freshness, consume within a day if dressed.
