  • 4 oz rice noodles, cooked & cooled
  • 1 cup shredded carrots
  • 1/2 cup chopped cucumber
  • 1/4 cup chopped peanuts Toast lightly for extra crunch if desired.
  • 1–2 pieces red chilies, thinly sliced Adjust according to spice preference.
  • to taste fresh cilantro
Dressing Ingredients
  • 2 tbsp lime juice
  • 1 tbsp fish sauce or soy sauce Substitute soy sauce for a vegan option.
  • 1 tsp chili oil or sriracha
  • 1 tsp honey Omit for vegan version.
  • 1 clove garlic, minced

Method
 

Preparation
  1. Whisk all vinaigrette ingredients together in a small bowl.
  2. In a larger bowl, toss the noodles, shredded carrots, chopped cucumber, and fresh cilantro.
Assembly
  1. Add the sliced grilled chicken on top and drizzle with the dressing.
  2. Finally, sprinkle the chopped peanuts and sliced chilies over the top. Serve it chilled or at room temperature.
