Ingredients
  

For the Chicken
  • 1 lb boneless, skinless chicken breasts, sliced or pounded thin
  • 2 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional for extra heat)
  • Salt and black pepper, to taste
For the Pasta and Sauce
  • 12 oz fettuccine pasta
  • 3 tbsp unsalted butter
  • 1 tbsp minced garlic
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 3/4 cup shredded mozzarella (optional)
  • 1/4 cup reserved pasta water (as needed)
  • Fresh parsley or green onions, chopped (optional for garnish)

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package directions.
  2. Reserve 1/4 cup of pasta water, then drain and set the pasta aside.
Preparing the Chicken
  1. In a bowl, season the chicken with Cajun seasoning, paprika, Italian seasoning, red pepper flakes, salt, and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes on each side until it turns golden and is fully cooked.
  3. Remove the chicken from the skillet and set aside.
Making the Garlic Sauce
  1. In the same skillet, reduce the heat to medium and add butter. Once melted, sauté garlic for 30 seconds or until fragrant.
  2. Pour in the heavy cream and chicken broth, then bring the mixture to a gentle simmer.
  3. Stir in the Parmesan (and mozzarella if using), continuing to mix until the sauce is smooth and creamy.
Combining Everything
  1. Toss the cooked fettuccine in the creamy garlic sauce, making sure every noodle is coated. Add a splash of reserved pasta water if needed to achieve desired consistency.
  2. Return the Cajun chicken to the skillet, allowing everything to simmer together for 1-2 minutes.
Garnishing and Serving
  1. Top with chopped parsley or green onions before serving hot.

Notes
